GRILLED CORN AND BLACK BEAN GUACAMOLE
This is hands down the best guacamole I’ve ever had. There is something about the added grilled corn and black beans that make my body beg for more. Put a bowl of this out with a bag of chips before dinner and it will be gone with the blink of an eye.
2 garlic cloves
½ white onion chopped
1 tablespoon salsa picante chili habanero
½ Anaheim pepper
2 tablespoons chopped cilantro
Juice of 1 lime
10 sweet golden tomatoes chopped
½ can black beans
2 ears grilled corn
Tortilla chips
Fork/spoon
Knife
Can opener
Husk corn and put on the grill. When corn shows grill marks remove corn from grill.
Cut kernels off cob.
Chop onion, pepper, cilantro, tomatoes, and garlic and combine in large bowl with corn.
Add salsa picante and lime juice and stir until evenly dispersed.
Cut avocados in half and remove pits.
Spoon avocado into bowl and stir gently.
Add black beans and stir gently.
Serve with tortilla chips.
