CORN AND BACON
Corn and Bacon is a must have summer staple. This is a great side dish for any and all grilled meals. This is my go to dish to make when I am going up north. It is easy to preassemble and store in a foil pan in the cooler. When you get to the cabin, all you have to do it pull it out and throw in on the grill!
½ yellow onion sliced
5 pieced precooked bacon chopped
1 clove garlic chopped
2 tablespoons butter
Salt
Pepper
Foil
Spoon
Cut the onion into slices so that it creates rings.
Toss the onions on the grill with a cube of butter on the top of each slice.
Flip when the butter melts.
When onions are done cooking chop them and toss in foil pan.
Chop bacon into small pieces and throw into foil pan.
Mince garlic and throw into foil pan.
Add corn, salt and pepper and stir until ingredients are evenly dispersed.
Cut butter into small chunks and place on top of corn mixture.
Cover foil pan with a sheet of foil. Toss on grill. Stir occasionally.
Corn and Bacon is done when butter is completely melted and mixture begins to caramelize.
